Our range of varietal wines capture the heart and soul of the magnificent diversity of “terroirs” present throughout the Languedoc. We use both tradition and innovation to express the true essence of the grape varietal.

Notes de dégustation / Tasting Notes :

Robe rouge intense aux reflets violacés. Le premier nez s’ouvre sur des notes prononcées de mûre, de cassis, et de prune noire. A l’aération, le nez évolue vers des notes réglissées et poivrées ainsi que quelques notes de violette. L’attaque en bouche est riche, sur des arômes de fruits noirs et des arômes intenses de menthe poivrée, lui apportant fraicheur et complexité. L’ensemble est équilibré avec une finale sur les épices et la réglisse (bonbon Cachou).
Vibrant light red colour with purplish highlights. The nose opens with intense notes of blackberry, blackcurrant and black plum, evolving towards liquorice and pepper notes on the nose, as well as a few hints of violet. The attack on the palate is rich, with aromas of black fruit and peppermint, giving it freshness and complexity. The whole is wellbalanced with a finish of spices and liquorice.

Cold soak for one week – Fermentation at 20°C – Pressing before the end of fermentation to maximise the fruit profile and more roundness.

Élevage / Ageing :
En cuve et sur lies pour conserver le fruit et apporter de la rondeur.
In tank and on lees to maintain the fruit and to give more smoothness.
